Berry Shortcakes

Berries.  Our family loves berries.  We whipped up this summertime treat for daddy and he had seconds.  (a rarity) This is a fool proof easy way to enjoy the seasons best.

ingredients

shortcakes
1 package frozen puff pastry dough
2 tablespoons butter
2 tablespoons sugar

berries
2 cups of sliced strawberries, raspberries
(you can also include blueberries)

1 pint whipping cream
3 tablespoons confectionary sugar

baking
Set dough out to thaw for 30 minutes. Heat oven to 375 degrees.Roll out pastry dough onto flat surface.  Use a cookie cutter to cut dough into pieces.  Place cut outs onto a foil lined cookie sheet.  Brush the tops of the cut out pastry with melted butter.
Lightly sprinkle sugar over the pastry pieces.
Bake for 15 minutes. Allow to cool.

Pour cold whipping cream into a bowl.  Mix at a
high speed, add in two tablespoons of confectionary
sugar. Beat until consistency is dense.

assemble
Split one baked pastry piece in half.  Plate bottom half.
Add whipping cream on top.  Layer berries
and place the pastry half on. Dust with confectionary
sugar.

Eight Years of Marriage

It has been eight years since I stood on the altar of St. Anthony's Croatian Catholic Church and vowed to take the man before me as my husband.

I knew he was a good man.  A man with values that mirrored my own.  His joy for living life pushed me out of my comfort zone; a gift.  He loved me and I him.

It wasn't chance but God's plan for us to meet.  I know that to be true because I am reminded of that often in subtle ways.  I hear that whisper in my ear. If you have heard it too, you know what I mean.

I couldn't have chosen a better man as the father of my children.  His face as well as theirs light up when they enter one another's space.  Sometimes I watch them interact and I am overwhelmed by the beauty of it all. 

I am proud of this journey we have been on. 

I look forward to what lies ahead us...and yes, even after eight years of marriage (ten plus years of knowing one another) I still have a crush on him.
