Strawberry Muffins

I love strawberries!  In our home we eat them all season long. While surfing Pinterest, I came across a strawberry muffin pin.  Since I had not baked with strawberries before, I hit the internet for some research.  I found a basic recipe and added the recommendations from others.  The result was delicious.   If you are a strawberry fan this recipe won't disappoint.

 Ingredients:
1/2 cup canola oil
1 cup milk
2 eggs
1 tsp. salt1 1/2 T. baking powder
1/2 cup white sugar
3 1/4 cups all purpose flour
1 tsp. vanilla
1/2 tsp. ground cinnamon
2 cups chopped strawberries

Method:   Preheat oven to 325 degrees.  Line muffin tins with liners. Combine oil, milk, eggs, and vanilla in a small bowl.  Beat lightly. In a large bowl, mix flour, salt, baking powder, cinnamon and sugar.Add strawberries  and stir to coat with flour. Pour milk mixture into the large bowl and stir together.  Fill cups. Lightly dust tops with granulated sugar if desired. Bake for 25 minutes.  Allow muffins to cool in 10 minutes and remove for pans.
Recipe makes 14 muffins.
