Mini Cheescake Recipe

Spending time in the kitchen with the trio is something I truly enjoy.  Maybe it is because I have spent hours in the kitchen with my mom while she cooked, baked, and conjured up fun projects. Oh and let's not forget the dividends of being in the kitchen:  the aroma, great tasting food, conversation, laughs, and memories created.

I am posting my favorite go to dessert due to popular demand. This recipe is fast, and simple. You can get the kids involved too!
                                                     

Ingredients List:
2  8 oz pkgs. cream cheese
2/3 c. sugar
1 T. vanilla extract
2 T.  fresh lemon juice
2 eggs
1 pkg. Oreo or Nilla Waffer cookies
1 can Comstock cherries

Method: Preheat oven to 350 degrees. In a mixing bowl blend cream cheese, vanilla, sugar, eggs, and lemon juice until creamy.  Line muffin tin with paper baking cups. Place one cookie in each cup.  Fill cups with cream cheese mixture (leave just a little room for rising). Bake for 20 minutes or until slightly golden.  Cool completly.  Top with cherries.  Refrigerate.

*You may also add chocolate chips, just fold them into your cream cheese mixture before filling the paper baking cups. The cheesecake cups can be topped with whichever you choose; cherries are a classic.
